Twelve Days of Christmas, #10: White Chocolate and Peppermint Cookie Brittle
What's Christmas without some candy cane? This unique take on a "cookie" pairs the refreshing minty candy with sweet, milky white chocolate in a fun cookie confection.
Day Ten of my Twelve Days of Christmas: White Chocolate and Peppermint Cookie Brittle.
I was a little skeptical at first when I saw the recipe, but the accompanying photo was totally beckoning me to try these it. And I'm glad I did!
I do find it unique that a cookie has turned into a crispy, crunchy brittle/bark. The sugar and butter have melted during the baking process to create an almost toffee-like flavour and texture, without risking chipping a tooth. The white chocolate and candy canes have also melted down, dotting the brittle here and there in festive colours. These are definitely a contemporary addition to your cookie tins alongside your traditional favourites.
You'll get a lot of small bits falling off as you cut/break the brittle into pieces—keep the crumbs and sprinkle them over some vanilla ice cream.
