Buttermilk Cookies
I was looking for some recipe inspiration to use up some extra buttermilk when I came across this recipe for Buttermilk Cookies. I was instantly intrigued.
The recipe is easy enough and is much akin to sugar cookie dough, with the addition of lemon rinds for flavour and buttermilk.
These cookies smelled delicious while baking in the oven, of vanilla, citrus and butter. Which is a shame because I couldn't taste-test these cookies. Out of the oven, they had a crispy exterior and when I split one open, had a soft, cakey interior. They especially look adorable with some colourful sprinkles on top.
While not exactly an Easter food, these cookies are definitely a fun and easy (and delicious) baking project to do with the kids this Easter weekend. You can find the recipe here.
