Sunday Comforts
Don’t you just love lazy Sundays? You get to sleep in, lounge around in bed, treat yourself to a hearty brunch, stay in your pajamas all day, have no set agenda, and the highlight to what would otherwise be dull and uneventful day is Sunday dinner.
One of my favourites for Sunday dinner is roast chicken. Such a simple meal screams comfort, and there are infinite flavour combinations you can play around with such a versatile meat as chicken.
This past weekend, I decided to go Moroccan-inspired and made this Morrocan Mint Roast Chicken from the early summer 2008 issue of Food & Drink magazine. With only a handful of ingredients, the mint and spice paste packs some serious flavour without being overwhelming. I served it along with some sautéed spinach, Moroccan-spiced carrots, and couscous with raisins and toasted almonds. A squeeze of lemon of the chicken to finish it off adds a lovely freshness to the whole dish.
This is a great dish for al fresco dining in the summer or to bring along on picnics! Plus, who doesn't love leftover roast chicken?!
